I wanted to share a fantastic recipe of my favorite dessert - Creme Brulee. It took me a long time to find the perfect recipe -- perfect being both simple and delicious. It is a success every time, so satisfaction is guaranteed
I worked with someone who was a part time chef at a restaurant, and after telling him my misfortune of making perfect creme brulee, he shared with me this recipe that I have now used for almost five years.
Before you begin you need two pieces of equipment not normally found in most kitchens.
1)
Ramekins
2)
Culinary Butane Torch
Both are available together as a
package set at amazon.com.
Ingredients:
2 cups of heavy cream
1/2 cup of sugar
5 egg yolks (that's the yellow part...it took me a long time remember that, even though my creme brulee was tasty with just the egg whites

)
1 tsp of vanilla
Combine yolks and sugar. Add heavy creme and vanilla. Pour the mixture evenly into each ramekins or other small baking dishes you have. Cook at 350in water bath for about 20 minutes. Let it chill in the fridge for up to 2 hours. When you ready to serve sprinkle some sugar, and then using professional culinary torch caramelize each one creme brulee. Decorate with blueberries or raspberries before serving. It takes literally 15 minutes to make this wonderful dessert.
